EZ PZ Carrot Cake

This is my favorite recipe for homemade carrot cake! This cake is so easy to make, perfectly moist, and topped with an easy homemade cream cheese frosting.

What you’ll need

2 cups of flour

2 1/4 cup of sugar

1 1/2 teaspoons of Baking Powder

4 eggs

1/2 cup of oil

1/2 cup of orange juice (or water)

2 cups of shredded carrots

3/4  teaspoon ground cinnamon

1/4 teaspoon ground ginger

pinch of ground nutmeg*

pinch teaspoon salt*

Frosting-

1 (8-ounce) package brick style cream cheese, softened to room temperature

½ cup  unsalted butter, softened to room temperature

2 cups  powdered sugar

1 teaspoon pure vanilla extract

How to make it-

Preheat oven to 350 degrees Fahrenheit,

mix ingredients together with whisk or spoon in a bowl until well combined,

spray either bundt cake form or 9×13 form with pam spray, coat with breadcrumbs or

flour , pour mixture in form and bake at 350 degrees Fahrenheit for approx. 45 min. Let

cool before frosting it .

For the frosting – just mix ingredients with mixer until smooth and creamy.

Cover with Frosting and enjoy your Easter!

* a pinch is what you can hold between 2 fingers

Optional

I always cut it in half and fill it frosting. It’s even more yummy!
